Study on the Quality characteristics of some Sudanese Honeys

Abstract:

The present study was undertaken to check the quality of some Sudanese honeys in the light of the International Standards for Honey Quality. The analysis of 4 authentic and 20 commercial honey samples showed that the honeys had amoisture content of 14.2 -18.2%, reducing sugars 58.1- 70.4%, sucrose 5.5-6.5%, ash content 0.54- 0.703%, hydroxy methyl furfural 6.5-7.05 mg/l00g, diastase activity 7.5- 15.0, lactone 2.1-3.9 meq Ikg, free acidity 29.4-52.2 meq Ikg and total acidity 31.5-55.9 meq/kg respectively. The results obtained generally indicated that the Sudanese honey quality agrees with the proposed Codax Alimintarius (1989) requirements for honey with exception of some commercial honeys which contained too higher acidity (110 meq I kg) and sucrose (19.6 %) in addition to lower ash ontent (0.26 %) and diastatic activity (2.1).
